Courgettes stuffed with Ham and Cheese
If you want a really simple and delicious recipe in which Spanish cheese is one of the main ingredients, this recipe for courgettes stuffed with ham and cheese is perfect for a light supper.
- 4 courgettes
- 4 slices boiled ham
- 2 tomatoes
- 200 g cured cheese (you can use Chivita mixed, Ovin Sheep or La collada Sheep…).
- 1 cup water
- 1 tablespoon butter
First of all, put the water in a saucepan and add the previously-washed whole courgettes. Bring to the boil. Boil the courgettes for about 8-10 minutes. Do not add too much water, as the courgettes must be cooked but not too soft.
Once cooked, cut them lengthwise and remove the pulp with a spoon. Put aside to use later for the filling.
Chop up the pulp and place in a frying pan with the melted butter. Add the diced tomato, ham, salt and pepper and lastly, add the diced cheese. Lower the heat and cook the mixture until the cheese has melted.
Your courgettes stuffed with ham and cheese are now ready to eat! Accompany with French fries or any other garnish of your choice.
